American pancake recipe

Light, thick and fluffy with a hint of sweetness – these are the perfect pancakes to load up with your fav toppings.

  • 225 grams plain flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 50 grams caster sugar
  • 300 ml whole or semi-skimmed milk 
  • 1 free range egg
  • 3 tbsp butter melted
  • 1 tsp vanilla extract


  • Melt the butter in the microwave and set aside.
  • In a medium sized bowl, mix together the flour, sugar, salt and baking powder.
  • In a separate bowl, whisk the milk and egg together.
  • Create a well in the centre of the dry ingredients. Pour the butter, vanilla, and milk mixture into the well.
  • Whisk the ingredients together until just combined. The batter will be slightly thick and lumpy, but well incorporated. Set aside to rest for 5 minutes.  
  • Heat a lightly oiled frying pan on a medium heat.
  • Pour or scoop enough batter into the pan for one pancake. 
  • Cook on each side for approx 3-6 minutes, until lightly golden brown.
  • Load up with your chosen toppings and dig in!
